#leftovers

Over the past 6 weeks or so, I have cooked two boneless pork butts in my dutch oven. (In the USA, this cut of meat is called the "butt" because it comes from the shoulder 🤷‍♀️). I have reserved and frozen the leftover liquid. Today, I thawed it out, added an equal part water by volume, brought it to a simmer, and then froze it in this ice-cube tray. I consider this to be seasoning rather than stock because it has all of the seasoning from the butts in it.

What should I do with the leftover lard?

What is #HumbleSoup, you may ask. It's any soup you whip up quickly, usually for just one meal. Beyond that, it's up to you. It's a great way to use up #leftovers and create new flavors on the fly. It helps to keep a few things on hand, like #bonebroth or other stock, frozen vegetables, cheese, and flavors like marinara, chutney, miso, etc. Mix and match! Be adventurous. Here's what made the #leftovers phenomenal:

1. Since it was down to carnivore me, I lightly crisped andouille sausage chunks in oil on med-high before adding all the remaining soup to the pot.

2. Bring to a boil. Lower heat to simmer. Cover. Let it cook until potatoes as nicely soft as they shoulda been.

3. Whisk 2 tbl flour (or GF thickener) into about 1/2 C heavy whipping cream. Pour into soup. Simmer another 5 min.

It's not "individual elements in broth" anymore, I tell you what.
