@RobotDiver sitting down is so helpful. I drag a kitchen stool over to the stove, and bring my knife and cutting board along so I don't have to keep getting up.

Budget permitting, lots of useful veg are sold in little pre-chopped portions. I can get onions, celery, peppers, holy trinity, and others. I am also the proud namer of #HumbleSoup, my favorite quick meal.

What is #HumbleSoup, you may ask. It's any soup you whip up quickly, usually for just one meal. Beyond that, it's up to you. It's a great way to use up #leftovers and create new flavors on the fly. It helps to keep a few things on hand, like #bonebroth or other stock, frozen vegetables, cheese, and flavors like marinara, chutney, miso, etc. Mix and match! Be adventurous. This is a simple way to make a comforting #HumbleSoup when you need a #QuickMeal . You need chicken or other stock (homemade if you can) a pouch of tuna, or other protein, some yogurt, grated cheese, and any seasonings you like. Put the meat in the cup, and stir in the yogurt and cheese until you have a mush. Now pour in the broth. Nuke until it's hot enough. Add seasonings to your liking. You can add leftover veggies or anything else that seems tasty.

Today's #HumbleSoup is a rescue. My partner and I tried a recipe for carne asada, which would have been fine, except the meat was tough. I whacked it into the instant pot with some broth to soften it. My sweetie made fresh chimichurri sauce, which did nice things in both the soup and some guacamole.

Today's #humblesoup is sort of jjigai-adjacent, a white American's impromptu take on a delicious Korean kim-chi soup I've only tasted a few times, and allowing for my food restrictions. Homemade multi-animal broth, frozen green beans, store bought kim-chi, fried pork belly, sesame oil, garlic shoyu, and a little bit of Greek yogurt just to thicken it up a bit. It's not the real thing, but it does taste quite nice for such a #quickmeal. #keto

The shredded cheese on that and gently stirring them together. This helps the cheese to blend in smoothly. I used smoked salt and some black garlic shoyu (available on Amazon and worth every penny.) At the end, I added some avocado. Hope this helps. I like to create new soup according to my whim and the contents of the fridge. Check my hashtag #HumbleSoup
