Food Adventures Continue!

Dessert Edition.

Democratic Republic of the Congo is represented by Puff Puff. Admittedly, I have been dodging this dish throughout a lot of West Africa. It keeps coming up. But I don’t like deep frying. I plucked up my courage and got it done. This was probably my most successful doughnut recipe yet. I was finally able to control the oil temp and it made for a much more enjoyable experience. It helped that the dough was beautiful. I will make this again. So good.

Republic of the Congo is represented by Kamundele (marinated beef skewers). These were simple and delicious. A very good reason to wake up the BBQ from winter hibernation! Served with rice. The leftovers were delicious! I was surprised that I was not able to find peanut oil despite trying four supermarkets. I ended up buying peanut butter and pouring off the separated oil at the top. It’s always interesting what ingredients are not readily available. I got to use my homemade Maggie seasoning for this! My growing selection of spice mixes is bringing me a lot of joy!

Dessert edition!

Comoros is represented shihondro / bwe la ndjugu (Comorian peanuts bar). This might very well be the dish that changes how I feel about candy making. It could be that I have finally found the right temperature on the stove to make candy! Or it could be the 26 g of fresh ginger in these bars. Woot! Ginger and fresh cracked pepper pack a punch. I will be bringing these on long runs!

Canada is represented by Jigg's dinner, traditionally eaten on Sundays in Newfoundland (last province to join confederation). I couldn't find my peas pudding bag and did it in the instapot instead. A little looser than normal but it'll be fine by the time it's eaten as leftovers. Everything on the plate is Canadian! This was so comforting - it's been ages since I've made Jigg's dinner and it was nice to have food from home on the mainland.
