"Rum Row," Frederick Judd Waugh, 1922.

This is a fairly off-the-beaten-track painting for Waugh (1861-1940), who was known mostly as a marine painter. His seascapes are still admired today.

The son of portraitist Samuel Waugh, he had the best education and lives mostly abroad, painting seascapes. He returned to the US in 1908 where he went from New Jersey to Maine to Provincetown, MA. He also did illustration work for periodicals, and was hired by the Navy to design camouflage for ships.

Most interestingly, he published a number of fairy tales with American settings. He was deeply interested in folklore and the supernatural, and sought to create a New World fairy tradition for young readers.

But today we have some lovely irises in empty old rum bottles. These probably were considered trash in his day....now they're valued collectibles!

CENTER OF THE GALAXY

½ oz lime juice
½ oz demerara syrup
½ oz honey syrup
½ oz raspberry liqueur
2 oz Blended Aged Rum ❸
pinch of grated cinnamon

Garnish: raspberries, lime wheel
Method: Combine all the ingredients in a cocktail shaker filled with cracked or cubed ice. Shake and double-strain into a chilled coupe. Float a lime wheel in the center of the drink and rest a raspberry in the center.

Named after an ester discovered in a dust ball scanned by the Max Planck Institute of Radio Astronomy in 2009, which smells of rum and gives raspberries their taste! Spec is by Martin Cate, Smuggler's Cove p121.

CHOCOLATE STOUT OLD FASHIONED

3 dashes walnut bitters
½ oz chocolate stout syrup
2 oz Black Blended Rum ❺

Glassware: Old-fashioned
Method: Combine all ingredients in a mixing glass with cracked ice and stir. Strain over a large rock with no garnish.

This is my twist on the original from High Proof Preacher on IG a few days ago. I started out with Sazerac rye (in bg of second pic), but ultimately I settled on a totally different base spirit, black blended rum (pouring pic), since it has toasty dark notes that complement the beer so well. I also did some black walnut bitters, trying to lean away from your typical orange vibe in an OF.

For my stout syrup I used Northern Monk Patrons Projects 43.02 — Dunked Chocolate Digestive Decadent Stout.
