Okay, so I have a MIGHTY HANKERING for ma po tofu. What could I use instead of ground pork? (It's not very much, like 1/4 lb.)

The people have spoken, mushroom seems to be the way to go! Got some dried shiitake & porcini in the cupboard so I'll give it a try

@nev I found a "tofu cutlet" that the local Korean grocery sells in bricks that might serve, if chopped into small pieces.

@nev maybe like spaghetti squash? I like using eggplant or squash as meat substitutes sometimes
