Apple sauce uses lots of apples and does not require peeling (but does require removing the core and cutting a bit). And you can freeze it in jars for winter.
And if you were lucky enuf to have a neighbor with a apple juice press, you could make juice (with whole washed apples) and later hard cider.
Given your bountiful tree, you might even want to invest in an apple juice press...
