Easy-peasy Italian caponata:
2 bell peppers
1. Chop up all the veggies (larger chunks take longer to cook, but will not disintegrate)
2. Put two cloves of garlic and a pinch of curshed chili in a pan with some oil and let the garlic get golden
3. Throw the veggies in the pan, add 2 glasses of water and some salt
4. Let it all simmer until all veggies are cooked
Tell me again vegan food is boring.
